15 Easy Side Dishes to Serve with Beef Tenderloin — Recipes From The Kitchn

December 09, 2017

Beef tenderloin is an annual feast in our household. Covering the beef tenderloin in a salt crust makes roasting it easy and fast, which leaves me with plenty of time to make delicious side dishes. Our table almost always includes bread like biscuits or rolls for soaking up roast juices, but it also needs a potato dish (or two or three) and a few vegetables that aren't slaws or salad too. Here are 15 of my favorite side dishes to serve with beef tenderloin.

Mashed, Boiled, Baked, or Roasted Potatoes

Whether they are mashed, boiled, baked, or fried, potatoes are my favorite luxury of the holiday. Roasted potatoes are an easy classic that can go in the oven alongside the roast, but choosing a make-ahead option like twice-baked potatoes or a gratin can make dinner prep even easier.

Not a Salad or Slaw, but Another Vegetable

A side salad or slaw is totally welcome on a holiday table filled with roasted and buttered side dishes, but if you need another green vegetable to accompany the potatoes, rolls, and roast, here are a few of our favorites. Those 15-minute mushrooms do double duty as a sauce and side dish.
