December 29, 2017

I take the same approach to side dishes as I do for the mains that fill my meal plan. I lean on simple, no-fuss sides that are a breeze to pull together and versatile enough to partner with just about anything. And judging by our most popular side dishes this year, so many of you all feel the same way.

Roasting brings out the very best in Brussels sprouts. Get this method for crispy sprouts down, then pair them with everything.

This recipe for creamed spinach will either make you fall more in love with this luxurious side, or it will make you a creamed spinach convert. This weeknight side takes me right back to my childhood, and I have a feeling it'll do the same for you. Steak fries are a natural partner to burgers and steaks and, to be honest, just about anything else you're putting on the table.

It only takes 15 minutes to pull these buttery, tangy mushrooms together, but given how decadent they taste, you'd think there would have to be something more complicated involved to coax out so much flavor.

When it comes to side dishes, my philosophy is the simpler, the better. And these potatoes hit the nail on the head. Partnered with grainy Dijon, these potatoes have a pop of tang to complement their crispy, crackly edges.

Everyone needs a super-simple tangy cucumber salad like this one in their back pocket. It's a light side dish that won't weigh down the rest of your dinner but still has enough punch to stand out on its own.

This is the sweet potato side I make most often, regardless of what's in my meal plan. Coated with a thin blanket of cornstarch, these fries cook up extra crispy on the outside.

This is not just a lighter version of mashed potatoes! No, mashed cauliflower is a side dish with merits all its own. This goes-with-everything side has an earthy, nutty flavor and a blissfully creamy texture.
