Our Most Popular Slow Cooker Soup Recipes of the Year — Slow Cooker Recipes from The Kitchn

December 30, 2017

While I often rely on my slow cooker for all sorts of dishes, my absolute favorite thing to make in my slow cooker is soup. No matter the season, soup is my comfort food and the slow cooker is one of the easiest ways to bring it to the table.

As we move into the heart of winter, you'll want to keep these popular slow cooker soup recipes by your side.

If I could make just one soup in my slow cooker, it would without a doubt be this French onion soup. It has it all — the rich, beefy flavors, tons of caramelized onions, all the melted cheese — and it could not be easier to make.

Split pea is my husband's favorite soup and this is the version we've been coming back to again and again. For extra flavor, I recommend swapping the water for chicken or vegetable broth.

I love that this recipe calls for chicken thighs. In addition to bringing some extra richness to the soup, they don't dry out the way lean chicken breasts might, even when they're left to simmer for longer than planned.

Everything you love about a really good cheesy, shredded chicken enchilada is ladled into a bowl, and it's positively delicious.

I love a good chicken and rice soup even more than chicken noodle. And because of its lengthy cook time, wild rice is a natural fit for the slow cooker.

This soup will remind you of a traditional potato-leek soup but with celery standing in for the leeks.

To get a leg up on dinner, I prep the vegetables and make the pasta a day in advance, since they get stirred in towards the end of cooking. This soup will reward you with an ample amount of leftovers.

If you're not already hoarding all your leftover Parmesan rinds in the freezer, this soup is a great reason to start. While the recipe calls for arugula, any greens you have on hand will work.
