The best part about this recipe is that you can actually get a head start on prep if you need to. Simply bake the potatoes ahead of time for about 45 minutes, let them cool, and then store them in the fridge until you're ready to stuff them.
To fill the potatoes you'll need to slice them in half lengthwise and scoop out the flesh with a spoon. You don't actually use this part in these egg boats, so be sure to set them aside for another use, like these cheesy mashed potato puffs.
