As we head into the holiday home stretch, we've got a week of guests, parties, and classroom holiday programs to fill up the calendar. If it were just the four of us as usual, I'd probably stick to a template of pasta, tacos, breakfast, and pizza, but with houseguests I want some dinners that are still fast and easy, but a little impressive too.

Here's what I'm cooking and eating during a happily harried holiday week with houseguests.

Planning my weekly meals is a habit I enjoy. Since I'm frequently asked by friends and family what I'm cooking for dinner each week, I thought it'd be useful to share my weekly meal plan here. Turning butternut squash into Alfredo sauce is both a smart way to get more vegetables into a pasta dinner and a delicious way to eat more squash this winter. One of the nice things about this particular dish is that the squash can be roasted in advance. The sauce and pasta come together in about 20 minutes.

My husband is in love with this recipe, and since our houseguest arrives this evening, it's a perfect fast and fancy welcome dinner. We'll serve it with a big salad and store-bought dinner rolls.

Breakfast for dinner is at its very best with this baked casserole. I'll put this together the morning of so it can be baked for dinner while we make a hearty winter fruit salad.

Sheet pan dinners are one of my favorite ways to feed a small crowd, and this sheet pan chicken souvlaki is no exception. We're serving this with cucumber and yogurt for the kids and a big Greek salad for the grown-ups.

This polenta pizza crust is nothing short of game-changing for Pizza Friday. It fulfills my craving for something lighter some Fridays and the kids love it. We're skipping the tomatoes in this recipe for leftover roasted vegetables.
