I find that winter makes me more lazy than I'd like to be, thanks to the combination of it getting dark at 5 p.m. and the bitter cold temperatures. After a long day of work, it's often a struggle to do more than get my comfy pants and slippers on ASAP. When that's the mood, dinner feels like a struggle. Luckily, these 10 recipes are meant for nights like that, when the only answer is something super simple and satisfying.

There is no denying that this one-skillet beef and macaroni casserole is serious comfort food. The macaroni cooks right in the pan, so there is no need to boil up a pot of water.

This well-rounded dish is creamy and risotto-like, thanks to the orzo, which releases its starch into the skillet as it cooks.
