What does healthy mean to you?

Healthy to me means lots of vegetables. Do I abide by that in all my dietary ways? Heck no. I love me some cheese and bread and chocolate and tortilla chips, and dang do they make up a lot of my diet. But if I'm feeling that a week calls for an especially nutritious all-star of a dish, you can bet it'll be full of veggies, probably with some beans and whole grains as well.

Also, I learned a valuable lesson about myself recently: I like a hot lunch at work. Salads are just not my favorite way to eat healthfully!

What Are Your Favorite "Healthy" Recipes?

Note: I serve literally all of these on a bed of brown rice or quinoa (whichever is in my pantry at the time). It's such an easy, tasty way to add some fiber and protein and help make a meal feel more substantial.

The king of flexitarian cooking, Peter Berley, has the best ever tofu recipe. Friends of mine that usually don't eat tofu dishes ask me to make this when we're cooking dinner together. It's so quick and easy and flavorful and you can easily sub dried dill for the fresh. I swear by this recipe.

2. Chana Palak from Because Butter

This is probably the most frequently repeated dish in my house. It uses staples I always have in my freezer and pantry, makes lots of leftovers (I love me some leftovers!), and freezes really well. I love freezing portions of leftovers so I have a variety of meals in my household of one without cooking every day.

This is what I make when I'm on my way home and just want something fresh, quick, and healthy for dinner. I swing by the store for a bag of prepped kale and a fillet of fish, and sometimes a beer to add instead of the wine suggested in the original recipe.

This is the dish to make when you're taking food to someone who just had a baby or just got out of the hospital. It is delicious, filling, healthy, and conforms to a slew of dietary needs. Also the recipe makes a ton and freezes like a champ, and meets my number-one recipe standard (it must be delicious).
