It feels like the stage of life I’m currently in is an utter whirlwind. While certainly some of this is of my own making given my enthusiasm for so many different hobbies, it’s also just the reality of being the mom of two young kids, with a busy career of my own. When things start to feel frantic, even small acts of self care make such a huge difference in my mindset, such as making healthy breakfasts and lunches to take with me to work. That’s where this chia coconut seed pudding comes in.
There are some mornings when I go to the gym and go straight to work from there. I had been stopping at a restaurant after my workouts on those days to grab their coconut chia seed pudding to go. After a few times though, I knew I could easily make my own version at home while also saving money and packaging. Not to mention, I can fully customize what I want to mix in and modify the portion size from the enormous serving the restaurant dishes out.
It’s hard to imagine this being much simpler. Mix just a handful of ingredients together in the evening, let it refrigerate overnight, and in the morning the pudding is ready to grab and go. The pudding itself has a pleasant flavor all on its own, but topping with fresh fruit, preserves, toasted coconut, etc. just makes it even tastier. Right now it’s all about summer fruits but come winter, I can imagine it being lovely with cranberry compote, caramelized apples, blood oranges, etc. Feel free to add granola, nuts and seeds, and nut butters as you see fit. This simple base recipe holds endless possibilities. If you need to make taking care of yourself more of a priority, this is an easy and delicious way to get started.
