My version of Watermelon Mojitos is blended and frozen. They turn into slushies. I really love this one for sipping on all summer long. They’re a fun drink to serve at a summer barbecue too. They happen to be a nice tool for cooling down.
Summer is hot. I lived in San Diego for 29 years, and summers were pretty hot there, but they were nothing outrageous. Then I lived in the Reno/Tahoe area for 4 years after that, and those summers were pretty hot too. I lived among the trees though and it cooled down at night, so the heat was pretty manageable.
Now I live in Arizona, which is a different kind of hot altogether. It’s so hot in Arizona that I’m pretty sure you could fry an egg on a black car in the middle of August. It’s so hot in Arizona that sometimes there are airline delays or cancellations for flights that are trying to take off or land in the middle of the day. It’s so hot in Arizona that a good chunk of the population finds things to do out of town during the months of June, July and August.
It’s a dry heat though. It’s not very humid here unless we’re getting monsoons- which happens several times during the hot months. It’s so hot in Arizona that we need to drink things like Slushie Watermelon Mojitos often to keep us cool!
The recipe makes 8 small Slushie Watermelon Mojitos. If we’re being honest here, my husband and I can take care of the whole pitcher. But if you just want a taste, you can share with friends. Or you can double or triple the batch.
They’re very easy to make. You just need to plan a little bit ahead and cut up the watermelon and freeze it. The frozen watermelon is key to making these slushies.
We served these at a barbecue once and our guests didn’t leave our house into well into the night. I think one of the neighbors ended up sleeping on the couch. But we won’t mention any names. Enjoy this summer time cocktail recipe!

Slushie Watermelon Mojitos
The perfect summer cocktail recipe!
- 5 cups cubed seedless watermelon
- 1 cup sparkling water, (chilled)
- 3/4 cup white rum
- 6 ounces frozen limeade concentrate, (thawed)
- 1/4 cup chopped fresh mint
- fresh mint and lime wedges, (for garnish)
- Freeze watermelon in a single layer on a baking sheet (2 hours, or until frozen).

Combine frozen watermelon, water, rum, limeade and mint in a blender, and blend until smooth. Mixture will be slushy.

Spoon into glasses and garnish with mint and lime slices, if desired.
