Recipe: Raspberry Ginger Power Smoothies — Smoothie Recipes

January 26, 2018

I know looks aren't everything, but I think we can all agree that this fruit smoothie is a complete stunner. It blends up into the prettiest pink hue I've ever seen, falling somewhere between millennial pink and deep mauve. But good looks aren't the only thing it has going for it — each sip tastes just as delicious and refreshing. A nub of fresh ginger and a squeeze of tangy lime juice balance the sweetness with a pungent, tangy kick that's sure to to perk up your tastebuds, and a scoop of Greek yogurt ensures this not-too-sweet berry smoothie is filling.

Don't Skimp on the Blend

This berry smoothie's success is also largely dependent on allowing for ample blending time. While frozen berries, particularly raspberries, bring a beautifully sweet flavor and alluring color, they come with tough, pesky seeds that — when not blended enough — can make smoothies unappealing.

For a lush, silky smoothie, free of crunchy seeds, plan to blend your drink on high speed for at least a full minute. This will also ensure the leafy greens are totally blitzed and blended into your drinks. While I opt for delicate spinach in this recipe, any leafy greens will work nicely.

Raspberry Ginger Power Smoothies

Serves 2

2 cups unsweetened nut milk
2 1/2 cups frozen raspberries
1 packed cup baby spinach (about 1 ounce)
3/4 cup plain Greek yogurt
Juice from 1/2 medium lime
1 (1-inch) piece fresh ginger, peeled and coarsely chopped

Place all the ingredients in a blender and blend on high speed until completely smooth and creamy, about 1 minute. Pour into 2 glasses and serve immediately.
