How Miami's Bread King, Zak the Baker, Starts His Day — My Healthy Morning

Welcome to Kitchn's series My Healthy Morning, where we show you how one person greets the day in a way that makes them feel their best. Each post will chronicle how that person defines healthy for themselves, and the habits and recipes that make their morning a little bit better.

If you take a quick glance around Zak Stern's home kitchen in Surfside, Florida, which he shares with his wife, Batsheva Wulfsohn, and their daughters, Abigail and Maya Maybel, you might never guess that he's been affectionately dubbed Zak the Baker and the king of bread by all of Miami.

The couple keeps their home fully stocked with bread (of course!), but also fresh fruit, veggies, nut milks, and an indoor edible garden of wheatgrass and sunflower sprouts. Being passionate about making (and eating) bread doesn't mean you have an unhealthy lifestyle; Zak shows us how by sharing his morning routine.

What does healthy mean to you?

For me, "healthy" means listening carefully to what your body is asking for, and responding accordingly. I don't like to speak about health in categorical terms because I believe that everybody's body is unique, so what's healthy for one person may be unhealthy for another.

When people ask, "What's the healthiest bread you make?" I normally reframe the question to, "What's the most nutritious bread?" The answers are whole-wheat (a heavy brown bread that uses unsifted cold-stone-milled whole-wheat flour, which is loaded with fiber from the bran, oil, and vitamins from the germ, and plenty of energy from the endosperm) and multigrain (which uses a sifted wheat flour so it's not as heavy as the whole-wheat, but it's loaded with nutrients from the oats, flax, sesame, pumpkin seed, and millet).

What does your healthy morning look like for you and your family?

I wake up around 3:30 or 4 a.m. and get to the bakery 10 to 15 minutes later. I drink a cup of strong black coffee, take a bite of pastry, and get to work. After that, it's all about the poop. If it's a good poop, it's a good day! My wife normally makes me three juices: a cashew milk choco, a green juice, and a carrot juice. I drink those around 6 a.m. and get back to work. I then finish the morning with a hearty breakfast of eggs, salad, and bread around 9 a.m.
