How To Make Frozen French Toast Sticks — Cooking Lessons from The Kitchn

January 01, 2018

Frozen French toast sticks aren't just some novelty frozen food, but rather a legitimately warm and filling breakfast perfect for little eaters even on the most harried school mornings. French toast sticks are exactly as they sound — sticks of soft, pillowy bread soaked in sweet, custardy goodness and then baked to golden perfection. You can eat them straight out of the oven or stash them in the freezer for your future self.

How to Turn Your Freezer into a Treasure Chest

Unlike traditional French toast that can be made from nearly any kind of bread slice, thick or thin, French toast sticks are made from thick batons of bread. This shape makes them better for oven baking and more substantial for freezing and reheating. Plus, this shape is fun and easy for kids and grown-ups alike. This recipe also makes a large batch, enough to eat the day you make them and still have tons to freeze for another morning in the future.

For Your Information

  • You'll need a loaf of unsliced white bread for these sticks. You'll have the best luck asking for this from the bakery department of your grocery store.
  • Make sure you have eggs and sugar on hand and grab a pint of heavy cream too.

Making French Toast Custard for Freezing

Because these French toast sticks are destined for the freezer and we need to bake, freeze, and then reheat without drying them out, heavy cream is a must for making this French toast custard. This added fat bolsters the batons in few ways: it serves as another source of fat (there's butter too!) during baking and also keeps them moist.

Freezing French Toast Sticks

More often than not, when we recommend freezing food for long-term storage we freeze it in a single layer on a baking sheet before moving it to a zip-top bag, but these French toast sticks are an exception. Just make sure the baked French toast sticks are completely cool before moving them to a gallon-sized zip-top bag for freezing. The sticks will keep well frozen for up to two months. Pull out as many sticks as you want to reheat at a time.

Reheating and Serving French Toast Sticks

There are two tasty ways to reheat the frozen french toast sticks: in the oven or a toaster oven. Both these methods will give you sticks with that thin, crisp exterior and custard-like interior. In a pinch, you can throw them in the microwave for a few minutes too. They won't be nearly as crisp, but for some mornings food that's just warm and dipped in syrup is enough.

You can serve these sticks with syrup or yogurt for dipping. Bonus points if you've got this three-ingredient peanut butter fruit pip for dipping too.

How To Make Frozen French Toast Sticks

Makes 6 to 8 servings

What You Need

Ingredients

1 (16-ounce) loaf soft white bread, unsliced
4 tablespoons unsalted butter
2 cups heavy cream
2 large eggs
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt

Equipment
Measuring cups and spoons
Cutting board and serrated bread knife
Rimmed baking sheets
Tongs
Gallon freezer storage bag

Instructions

  1. Slice the bread. Use a sharp serrated knife to cut the loaf of bread into 1 1/4-inch-thick slices and then cut each slice into 3/4-inch.
  2. Heat the oven and coat 2 baking sheets with butter. Heat the oven to 375°F. Generously butter 2 rimmed baking sheets with 2 tablespoons each.
  3. Make the French toast custard. In an 8x8-inch baking dish, whisk together the cream, eggs, sugar, cinnamon, and salt. Make sure the custard is homogeneous.
  4. Coat the French toast sticks in the custard. Dip and roll each French toast stick in the custard and then swipe off the excess custard between two fingers while moving the coated sticks to the prepared baking sheets. Allow about 1/2 inch between each stick.
  5. Bake the French toast sticks. Bake the French toast sticks for 5 minutes per side, using tongs to turn them as each side becomes golden.
  6. Cool the French toast sticks. Once golden, immediately move the baked French toast sticks to a cooling rack so they remain crisp. Cool completely before freezing.
  7. Freeze the French toast sticks. Move the completely cooled French toast sticks to a gallon-sized zip-top bag to freeze. It isn't important to individually freeze the sticks first, but they must be completely cool before going into the freezer.
  8. Reheating the French toast sticks from frozen. Once frozen, the French toast sticks can be removed from the freezer as needed. Reheat the French toast sticks in a 350°F oven or toaster oven. Arrange on a baking sheet and bake for 5 minutes, flipping once about halfway through baking. Alternatively you can microwave the French toast sticks for 2 minutes on high, but they will not be as crisp coming out of the microwave as they would from the oven.
