8 Breakfast Recipes Every College Kid Should Know — College Eats
College is where my breakfast habits took a nosedive. I don't know about you, but I wasn't prepping egg whites and avocado toast in my dorm-room microwave freshman year. In fact, I don't think I had any fresh produce my entire freshman year. That was the year I wore all black, read Chekhov, and started every morning with a Diet Pepsi.
I wish I'd had the wherewithal to cook any of these delicious breakfasts back then. Some are quick, some are nutritious, and some are cheap — but they all taste great.
1. Overnight Oats
Overnight oats are a little gift you give your morning self before you go to bed, and they couldn't be easier or more inexpensive to make. Dress yours up by toasting the oats before you cook them, adding toppings like nut butter and dried fruit, or even going savory with an egg and a drizzle of Sriracha.
2. Easy Banana Pancakes
Not only are these banana pancakes grain-free, but they are also incredibly easy to make, freeze well, and taste delicious as is or doused in maple syrup.
3. Savory Muffins
Chances are that most mornings you're probably eating breakfast while running to class. The easiest way to get some on-the-go brain fuel is with these savory muffins. Have two!
4. Breakfast Burritos
Prepping ahead is important for finals, for job applications, and for breakfast. Who wants to be rushing at the last minute, digging around for a few forgotten handfuls of dried cereal? These breakfast burritos can be prepped in a large batch then individually frozen and microwaved a la minute. It's like your favorite frozen burrito from the grocery store, but so much better.
5. Breakfast Cookies
The best way to combat those donuts staring you down in the dining hall is with some cookies. No, really! These are healthier, protein-filled, moist, and chewy and they'll keep you full until lunch. Plus, chocolate for breakfast. Perfection.
6. Avocado Toast
Yes, this is definitely the easiest breakfast item on this list, but it's essential to have in your arsenal. Grab some avocados from Trader Joe's, take some bread from the cafeteria, and you've got breakfast.
8. Scrambled Eggs
No easy breakfast list would be complete without the addition of scrambled eggs. What's not to love, really? Make 'em plain or top them with whatever leftovers you have in your dorm kitchen.
