This Cashew Chicken and Broccoli Is Better than Takeout — Delicious Links
If you have a favorite Chinese takeout spot, you've probably ordered cashew chicken before. And while it's convenient to call in an order when you really don't have time or energy to cook, this homemade version is definitely worth a try.
Why make your own? For one, it comes together in less than 30 minutes. (Your delivery order might take up to an hour on a busy night — one point for homemade!) You also save a little money. Sure, you might have to spend a little more at the store the first time you buy some of the components like soy sauce, sesame oil, and cornstarch, but then you have these staples in your pantry for future stir-fry cravings! Bonus: You don't have to tip anyone when you make your own cashew chicken at home. Perhaps my favorite reason is that you know exactly what goes into your dish — the same cannot be said for ordering from a restaurant.
Once you have your cashew chicken and broccoli, garnish it with sliced scallions and then either serve as is or with rice. (Cauliflower rice also works here if you want to sneak in an extra serving of vegetables!)
