What does healthy mean to you?
For me, being healthy is all about balance. It's about eating foods that make my body feel good and nourished, but also foods that are plain delicious and feed my soul. My boyfriend and I eat organic (when possible) and are lucky that we can purchase local meat. Most of our meals and snacks are made at home with minimally processed ingredients. Making things from scratch helps us to feel better, avoid funky ingredients, and makes those nights when takeout is the only option guilt-free.
What Are Your Favorite "Healthy" Recipes?
To get through my day, I need a filling and protein-packed breakfast. I love making overnight oats because I can mix up the flavors, while getting protein in the form of oats, milk, and yogurt. I use maple syrup to sweeten mine, but honey and other natural sweeteners work well too. I also make versions with fruit like bananas, strawberries, wild blueberries, and raspberries.
Since we both work full-time, we really rely on quick recipes for weeknight dinners. This recipe is great because it's filling, mostly plant-based, and budget friendly. We are trying to eat more meals with meat as an add-in, instead of the focus. I know topping it with yogurt may sound weird to some, but it complements the other flavors nicely!
3. Fish Tacos from Damn Delicious
This recipe is great because I can get it on the table in 15 minutes, so it keeps me from ordering takeout. I rarely have chipotle paste on hand, so I either use some chopped up chipotles in adobo or chipotle powder. I usually serve something on the side to fill us up like hummus, salsa and chips, or even veggies and dip (best blue cheese dressing, hands-down).
I'm definitely a person who needs a sweet treat at least a few times a week. This recipe is great because it uses less refined sugar than traditional recipes and has two types of nuts for good fat. You won't even notice they are flourless or leaning more towards healthy!
I've been trying to make my own bread more often to save money and to know what's in my food. This pita bread has been my most successful endeavor and my boyfriend requests that I make it all the time. It's easy, strangely cathartic, and stores well either on the counter for a few days or double-wrapped in the freezer.
