My husband does all the dishes in our house. Which is fantastic, except for when he's out of town and then not only do I have to make dinner, but I also have to do the dishes too.
So when he occasionally travels for work, you better believe I pick meals that use as few dishes as possible so that when dinner is done, I can get everything cleaned up as quickly as possible.
He probably wonders why I don't do the same when he's doing the dishes.

This is the easiest little quiche on the planet and, as someone who doesn't even really love quiche, I could eat this every day. Sauté the onions, whisk in the other ingredients, and pour it in the crust. Done and done!
This one is a crowd-pleaser every time, although my girls prefer it when I leave out the mushrooms. And because I'm a nice mom, I sometimes do.
The house smells amazing and dinner is served in 30 seconds — all you need is to shred some cheese and you're ready to go!
I am obsessed with these sandwiches — they might be my very favorite in the whole world. I make them every time we have company, but they're easy enough for any day of the week.
