Lemon Rice with Capers and Parsley

Here’s an easy side dish recipe for Lemon Rice with Capers and Parsley.

Making regular steamed rice becomes a little bit boring when you’re serving it as a side dish for dinner. So why not spiff things up and add a few ingredients to your usual rice to make things more delicious? This Lemon Rice is an easy recipe with great flavor. Serve it with roasted chicken, grilled meat or your favorite seafood recipe.

How to make Lemon Rice:

This rice recipe is made in a non-traditional way. Normal rice is made with an exact amount of water matched to an exact amount of rice and then cooked together until the rice absorbs all of the water. Not this rice! In this recipe, the rice is cooked just like pasta. You’ll boil the rice in a pot of water until it’s tender, and then you’ll drain the rice and move it to a skillet.

In the skillet, you’ll melt butter and add the rice with a little bit of salt and pepper. Then you’ll add lemon juice, capers and parsley. A little more butter added in at the end finishes it off to create this wonderful Lemon Rice side dish.

What are Capers?

Well, technically capers are the little green flower bud of the caper bush. They’re dried in the sun, pickled and sold in a jar. They have a tangy lemon flavor. And they are often used in Italian dishes, dressings and sauces, salads and main dishes. In your grocery store, you will be able to find capers near the olives and pickles.

Lemon Rice with Capers with Parsley

Ingredients

  • 1 cup long grain white rice
  • 2 tablespoons unsalted butter, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon capers, drained

Instructions

  • Add rice to a large pan of boiling water and cook over high heat for about 15 minutes, or until just tender. Yes, I know this is not the norm for rice. You'll be cooking it in more water than it needs (like you would cook pasta). Drain, rinse under cold running water, and drain again thoroughly.
  • Heat 1 tablespoon of the butter in a heavy skillet over low heat. Add the rice, salt, and pepper and heat, stirring gently with a fork. Stir in the lemon juice, parsley, and capers and remove from heat.
  • Stir in the remaining butter and taste for seasoning. Serve immediately.
