Here’s my weekly post sharing about what’s going on in the world of RecipeGirl, as well as some fun links to things I’ve come across lately. Warm and Cozy Casseroles!
- Even casserole nay-sayers will be happy with this Beef Burrito Casserole. It’s a dreamy dinner recipe because you will find that everyone will be satisfied with this one.
- This Chicken and Broccoli Rice Casserole is made with a delicious white cheese sauce and cheddar cheese too. It’s baked a short amount of time to warm it all up.
- Easy Tater Tot Casserole is the ultimate comfort food dinner. It has a creamy, ground beef sauce and it’s topped with plenty of melted cheese.
- Sometimes you just need a good comfort food recipe… a recipe that is easy-to-make… and a meal that every member of your family will eat without complaints. I’ve got one one those recipes for you: Beef and Bean Enchilada Casserole!
- This Chicken Spaghetti Casserole recipe is the best comfort food casserole recipe! It’s a good dinner recipe for cozy winter nights, and it’s one that the whole family typically enjoys too.

What I’m watching and reading:
- I watched The Last of Us on HBO Max. If you’re into zombie type/end of the world kind of shows, you’ll enjoy it. I loved it.
- I just finished listening to Nora Goes Off Script. It has been a while since I’ve listened to a light-hearted, fun kind of book, and I really enjoyed this one. It has a bit of a love story to it. It kept my attention on my daily 5-mile walks!

- Butternut Squash and Black Bean Enchiladas look good for dinner!
- I think we all need to try this Creamy Tuscan Chicken Gnocchi Soup.

Here’s what’s going on in my life:
- Super Bowl and the Waste Management Open have been happening at the same time here in Arizona this week, and everything ends today. The town has been crazy busy with lots of traffic and parties and events everywhere. My husband went to the Open, but I stayed away from all of it!
- One side of the hallway in the entrance to our home has been torn out to put a new large, four-panel door that leads to an inner courtyard. Now we need to fancy up the courtyard! It seems like home projects are never-ending.

Products I’m loving:
- These monogram necklaces are pretty, and would be a nice gift for Valentine’s Day too.
- If you’ve been looking for a good fat free/sugar free salad dressing, the SkinnyGirl brand balsamic flavor isn’t bad.
- Love this tabletop fire pit!
- This canvas and basket tote is so adorable. Would be a fun gift to fill with things!
- Do you use avocado oil in your cooking? I’ve pretty much replaced my use of olive oil in sautéing with avocado oil. You can buy a big bottle of it at Costco.
- We have this ice bucket. I keep it on the counter in our bar area because it’s so cute!
Bake this week:
- Pineapple Banana Bread (love the flavors in this one)
- Amish Sugar Cookies (melt in your mouth!)
- Red Velvet Cheesecake Cake (for Valentine’s Day!)
