Watermelon Mint Margaritas

Watermelon Mint Margaritas are the most refreshing cocktails to drink in warm weather months!

I’m not usually much of a margarita person myself, but if you give me a totally fruity margarita, I’m all in. These watermelon mint margaritas are just that. They are a delicious blend of fresh and juicy watermelon with lime and tequila and mint. A little bit of sugar in the cocktail sweetens everything up a little more. They’re such a satisfying drink to serve on a hot day.

How to choose a ripe watermelon:

There is nothing worse than buying a watermelon at the store, slicing it open and having it taste just kind of average. You want your watermelon to be juicy and sweet. Here are a few tips for choosing a perfectly ripe watermelon.

  • Pick up the watermelon and pat its belly. A ripe melon will produce a deep, hollow sound. Under-ripe melons will sound more like a dull thud. The surface of the melon should be hard and firm.
  • Watermelons develop a yellow spot at the place they rested on the ground while growing. When they are ripe and ready to eat, the spot will turn a a brighter yellow. The brighter the spot, the longer the melon stayed on the vine sweetening up.

How to make Watermelon Mint Margaritas:

The first thing you want to do is cut your watermelon into chunks. Those chunks are then placed into the freezer until they are frozen. Frozen watermelon acts as the “ice” for the margaritas, so you won’t need to add any additional ice in the recipe.

You’ll blend frozen watermelon with tequila, sugar, lime zest, lime juice and fresh mint. Then, you’ll pour the watermelon mint margaritas into rimmed glasses, garnish and serve.

How to rim margarita glasses:

Classic margarita glass rims are edged in margarita salt. With these fruity and sweet watermelon mint margaritas, you have a choice of edging the rims of the glasses in either salt or sugar. You’ll put some lime juice on a plate, dip the rim of the glass in the lime juice and then edge the rim with salt or sugar. If you opt to use sugar, I suggest using superfine sugar so it’s a nice, thin coating.

Watermelon Mint Margaritas

Ingredients

  • 4 cups seeded and chopped watermelon
  • lime juice
  • finely granulated sugar or salt
  • 1/2 cup tequila
  • 1/4 cup granulated white sugar
  • 1 tablespoon grated lime zest
  • 1/4 cup freshly squeezed lime juice (about 3 limes)
  • 2 tablespoons chopped fresh mint
  • mint leaves and/or watermelon wedges, for garnish (if desired)

Instructions

  • Place the watermelon chunks in a single layer on a baking sheet. Freeze for 4 hours, or until firm.
  • Coat the rims of cocktail glasses with lime juice; dip in sugar or salt.
  • In a blender, process the frozen watermelon, tequila, sugar, lime zest, lime juice and mint until slushy. Pour into glasses. Garnish, if desired.

Notes

  • *If you don't have time to freeze the watermelon, simply make the drinks as directed and add ice to the blender for slush.
  • *To make this a nonalcoholic drink, sub orange or apple juice for the tequila.
