Red Snapper with Pineapple Salsa is an easy and healthy grilled fish recipe to make for dinner.

If y0u’re a bit wary of cooking fish, this is a recipe you shouldn’t be afraid to try!  It’s very easy to prepare this grilled red snapper. It’s simply salted and peppered and placed onto a hot, oiled grill.  While grilling, the fish is brushed with a simple mixture of lime juice and oil.  For serving, it’s topped with a fresh pineapple salsa.  The pineapple salsa is homemade, but it’s super simple to put together (read on for the details).

Can you use other fish besides red snapper for this recipe?

You want to use a white fish that flakes apart easily when grilled, and that’s why red snapper is perfect. Haddock, cod, tilapia and halibut would all be good substitutes for red snapper in this recipe. They will all be delicious when grilled and topped with the fresh pineapple salsa.

Pineapple Salsa

How to make fresh pineapple salsa:

It couldn’t be much easier to make the salsa.  It’s simply a mix of minced fresh pineapple, minced sweet onion, minced yellow/green/red bell pepper and minced fresh cilantro.  That’s it! If you don’t wish to buy a whole fresh pineapple, look for already chopped fresh pineapple in your produce section.  Canned pineapple may also be used in a pinch.

Red Snapper with Pineapple Salsa

Simply grilled red snapper served with fresh pineapple salsa.

PINEAPPLE SALSA:

  • 1 cup minced fresh pineapple
  • 1/2 large sweet onion, (minced)
  • 1/2 large yellow bell pepper, (seeded and minced)
  • 1/2 large green bell pepper, (seeded and minced)
  • 1/4 cup minced fresh cilantro

FISH:

  • 3 medium limes, (juiced)
  • 1 tablespoon vegetable or canola oil
  • 1 1/2 pounds red snapper filets, (cut into 4 servings)
  • salt and pepper

PREPARE THE SALSA:

  1. In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.

PREP THE FISH:

  1. In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.

  2. Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.

  • You can add in some minced red bell pepper too, if you’d like.
  • If you are following the Paleo diet, use avocado oil or olive oil in place of the vegetable oil.
