mountain christmas cookies

These Mountain Christmas Cookies are pretty much just like chocolate chip cookies, but with using holiday M&M’s in place of the chocolate chips.

Why are these dubbed as mountain Christmas cookies? Well, we baked them when we were spending celebrating the holidays up in the snowy mountains of Colorado and they were eaten up quickly. So we kept the recipe, and now we bake them every year with that nice memory.

How to make Mountain Christmas Cookies:

The complete, printable recipe is at the end of this post.

Preheat the oven to 375°F. Line baking sheets with parchment paper.

In a large bowl, use an electric mixer to beat together the butter and shortening on medium speed for 30 seconds. Add the brown sugar, baking soda and ¼ teaspoon of salt; beat until light and fluffy. Add the eggs and vanilla; beat well.

Add the flour, mixing at low speed just until combined. Stir in the M&M’s and nuts (if desired).

Drop the dough from rounded teaspoons 2 inches apart onto the prepared baking sheets. Bake for 8 to 10 minutes or until golden.

Cool the cookies for 1 minute on the baking sheet. Using a wide spatula, transfer the cookies to wire racks to cool completely.

These Mountain Christmas Cookies are hearty enough to nibble on after a long hike or a full day on the slopes or a day of holiday shopping. Pecans are added in for a little protein boost! You don’t have to add the pecans, but the extra crunch is nice. I find that if you use finely chopped pecans then that is best. Leave out the nuts if anyone is allergic. Enjoy!
