What Is Star Bread?

Gold Star Bread is a glorious, glowing ode to brioche, cinnamon rolls, monkey bread, and coffee cake all wrapped up in tender outstretched rays. The dough itself is soft and buttery, rich and warmly spiced, infused with the flaxen hue of ground turmeric. That alone could be turned into a luscious loaf. For a special occasion, though, we might as well go all out. Mocha infuses each twist and turn as a sweet wake up call. Ease into a festive day ahead with your very own golden star leading the way.

Sharing pull-apart bread with loved ones is a whole different experience from whacking off a simple slice. You eat with your hands, drop all pretenses, and can surrender yourself to the tactile sensation of the warm, freshly baked dough. While it makes for a showstopping breakfast or dessert, the assembly is no more complicated than any other yeasted treat.

Filling Ideas for Star Bread

If you’re not a coffee person, you’ve got plenty of flavorful options.

  • Easiest of all, simply omit the coffee powder and keep it cocoa.
  • Swap the coffee and cocoa for ground cinnamon.
  • Use brown sugar and chai spices.
  • Add roughly chopped pecans, walnuts, and/or crystallized ginger.

The sun may hide away on some winter days, but the stars will still come out to guide your way. Hold on to that golden glow through the holidays and beyond.

This buttery pull-apart bread shines with golden turmeric and warm spices. The mocha sugar filling makes it a sweet wake up call on any winter morning.

Ingredients

Golden Bread Dough:

  • 3/4 Cup Plain Non-Dairy Milk
  • 1/4 Cup Coconut Oil or Vegan Butter, Melted
  • 1/4 Cup Granulated Sugar
  • 1 (1/4 Ounce or 2 1/4 Teaspoons) Packet Active Dry Yeast
  • 2 1/2 Cups Whole Wheat Flour
  • 1 1/2 Teaspoons Ground Turmeric
  • 1 1/2 Teaspoons Ground Ginger
  • 1 1/2 Teaspoons Ground Cinnamon
  • 3/4 Teaspoon Ground Cardamom
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Ground Black Pepper
  • 1 Teaspoon Salt
  • 1 Teaspoon Vanilla Extract

Coffee Sugar Filling:

  • 1/2 Cup Granulated Sugar
  • 1 Tablespoon Instant Coffee Powder
  • 2 Teaspoons Dutch-Processed Cocoa Powder
  • 1/4 Teaspoon Salt

To Serve (Optional):

  • Confectioner's Sugar
  • Sprinkles

Instructions

  1. In a medium bowl, mix together the non-dairy milk, melted coconut oil or butter, sugar, and yeast. Allow it to sit for 5 - 10 minutes, until the yeast has reawakened and become gently frothy.

  2. Separately, sift together the flour, turmeric, ginger, cinnamon, cardamom, cayenne, black pepper, and salt. Make sure the spices are all equally distributed throughout the mixture before adding the dry ingredients into the bowl of wet. Add the vanilla last and combine with the dough hook attachment in your stand mixer.

  3. Continue kneading with the machine for 8 - 10 minutes, until it creates a soft, smooth, and elastic dough. Alternately, you can do this by hand and knead for 15 - 20 minutes instead.

  4. Transfer the dough to a lightly greased bowl, cover with a clean kitchen towel, and let it rise for 1 hour, until it's roughly doubled in volume.

  5. To shape the loaf, cut the dough into four equal pieces. Shape each piece into a ball and let rest for 15 minutes for the gluten to relax again.

  6. Meanwhile, prepare the mocha sugar by briefly pulsing all the ingredients in a food processor to combine. Set aside.

  7. On a lightly floured surface, use a rolling pin to roll each ball out into a 10-inch circle. Place the first one on a parchment paper-lined baking sheet. Sprinkle with 1/3rd of the coffee sugar, and top with another round of dough. Repeat until you have a tidy stack.

  8. Place a drinking glass in the center to act as a barrier, preventing you from cutting all the way through the middle. Use a pizza wheel or very sharp knife to cut 16 equal strips radiating out from the center, going through all the layers.

  9. Pick up two adjacent strips and twist them away from each other twice so that the top side is facing up again. Repeat with the remaining strips of dough so that you end up with eight pairs of strips.

  10. Pinch together the ends to seal and create the star's points. Remember to remove the drinking glass in the middle before baking.

  11. Preheat the oven to 350 degrees while the shaped loaf rises one last time, 30 - 45 minutes.

  12. Bake for 22 - 26 minutes, until golden brown all over. Let cool for at 10 minutes before serving. Dust with confectioner's sugar and sprinkles if desired and serve warm or at room temperature.
