Blackberry Raspberry Cobbler

Blackberry Raspberry Cobbler is a lovely combination of two summer berries baked with a sweet cobbler topping.

Once in a while, I set aside my all-time favorite summer cobbler recipe for peach cobbler and make something new. This summer, I tried this BlackBerry Raspberry Cobbler, which is a wonderful combination of berries! This is your typical cobbler, with lightly sweetened fruit topped with a super easy to make batter. The batter bakes into the fruit to create a delicious cobbler!

Ms. Charles was a chef for Paula Deen at her Savannah restaurants. And she knows all about Southern cooking, so these recipes can be trusted!

Ingredients needed for cobbler:

  • salted butter
  • granulated white sugar
  • lemon
  • blackberries
  • raspberries
  • self-rising flour
  • white sugar
  • baking powder and salt
  • milk

How to make your own Self Rising Flour:

You need one cup of self rising flour for this recipe. If you don’t want to buy a whole bag, make it yourself at home (it’s easy!) Measure your flour carefully. You want 1 level cup of all-purpose flour. Add 1½ teaspoons baking powder and ¼ teaspoon kosher salt. Whisk to combine. Then you have self-rising flour!

How to make Blackberry Raspberry Cobbler:

The complete, printable recipe is at the end of this post. Preheat the oven to 400°F.

The first step is making the fruit filling. To a 9×13 baking dish, add the melted butter. In a medium bowl, combine the sugar and lemon zest and rub together. Add the blackberries and raspberries, and toss to coat. Spoon them evenly on top of the butter in the baking dish.
 
The next step is making the batter for the cobbler topping. In a medium bowl, whisk together the flour, sugar, baking powder and salt. Stir in the milk (the batter will be thick). Spoon the batter on top of the berries. There might be spots it doesn’t cover, and that’s okay. Bake until the fruit in the cobbler is bubbling up at the edges and a toothpick inserted into the cobbler batter on top comes out clean (about 20 minutes).

The cobbler will be too hot to eat when it comes out of the oven, so let it cool for about 30 minutes.

Then you can dish out individual servings. Be sure to scoop up the sweet juices, and add those to your bowl too!

Serve topped with vanilla ice cream or whipped cream. Enjoy!

Different fruit combinations suggested for cobbler:

Change things up! Try using a mixed berry blend. Use a combination of peaches and raspberries. Or try using different stone fruits like plums or nectarines.
