This Big Apple Pancake is the perfect, delicious fall breakfast for two.
Weekends are for pancakes. It’s easy to whip up a batch of buttermilk pancakes, blueberry pancakes or banana pancakes. But a skillet pancake like this Big Apple Pancake is more special and super easy to make too. If there are just two of you, then you’re in luck. This pancake is meant to feed two people!
How to make a big apple pancake in a skillet:
Melt butter in an ovenproof skillet. You can use a cast iron skillet or any other ovenproof skillet. Take out two tablespoons of the butter and put it in a blender. Place apple slices in the skillet with the butter. Cook for a few minutes- until the apples begin to soften.
To the blender, add milk, flour, eggs, sugar, vanilla and salt. Blend, and then pour the pancake batter over the apples in the skillet.
What are the best kind of apples to cook with?
- Jonagold: Sweet and tart, this variety of apple works well when baked.
- Honeycrisp: This sweet apple holds its form when cooked, and it’s delicious too!
- Gala: This apple is sweet enough so you will not need a ton of sugar in the recipe.
- Golden Delicious: Sweet with a mellow flavor, this is another favorite apple to cook with.
Transfer the skillet to the oven and bake until the pancake is puffed and golden. Watch for the pancake to puff up a lot in the oven and sink down when removed from the heat.
Dust the pancake with powdered sugar. Then cut, and serve. The big apple pancake serves two people. So each serving will be two slices. You get to eat half of the giant pancake!

Big Apple Pancake for Two
Ingredients
- ¼ cup (½ stick) unsalted butter
- 1 large apple (peeled, cored and cut into ¼-inch wedges)
- ½ cup whole milk
- ½ cup all purpose flour
- 4 large eggs
- 3 tablespoons granulated white sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- powdered sugar, for dusting

Place the oven rack in the middle of the oven. Preheat oven to 450 degrees F.

Melt the butter in 10 to 11-inch ovenproof skillet over moderate heat, then transfer 2 tablespoons of the butter to a blender. Add the apple wedges to the skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes.

While the apple is cooking, add the milk, flour, eggs, sugar, vanilla and salt to the butter in the blender and blend until smooth.

Pour the batter over the apple in the skillet and transfer the skillet to the oven. Bake until the pancake is puffed and golden, about 15 minutes. The pancake will puff up a lot in the oven and sink down when removed from the heat. Dust the pancake with powdered sugar, cut into slices and serve immediately.
