- ½ cup diced red onion
- ½ cup diced bell pepper
- 1 pound lean ground beef 93% lean
- 1 teaspoon smoked paprika
- ¾ teaspoon cumin
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon coriander
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- 1 tablespoon all-purpose flour
- ¾ cup water
- ½ cup corn kernels
- ½ cup black beans rinsed and drained
- 1 cup chips lightly crushed
- ⅓ cup shredded sharp cheddar cheese
- ⅓ cup shredded Monterey jack cheese

Preheat oven to 375ºF.

Heat a large nonstick pan over medium heat. Add olive oil, once hot, add the onions. Saute until translucent, 2 minutes.

Add the bell peppers and saute for 2 minutes.

Increase the heat to medium-high, add the beef, cook until browned, breaking the meat up until smaller pieces, about 4 to 5 minutes.

Sprinkle the paprika, cumin, salt, pepper, coriander, oregano, garlic powder, onion powder, chili powder, and flour. Stir and cook for 1 minute.

Slowly add the water and cook until the beef sauce is slightly thickened.

Add the corn and black beans, stir until combined.

Transfer the beef mixture to a 2-quart casserole dish, spread into an even layer.
