I’ve been enjoying my holiday baking this year, but it’s nice to whip up a sweet treat that not only doesn’t involve baking, but also doesn’t involve cleaning my food processor or blender. This recipe for vegan dark chocolate granola bark is so easy, not to mention festive, fun, and adaptable.
The star of the recipe is the Sprouted Oat Quinoa Cacao Granola from One Degree Organics, a brand that I’ve come to love for its transparency and high quality cereals, oats, flours, and granolas. It’s the perfect breakfast treat: nutty and wholesome, but with a distinctive cacao flavor and a subtle hint of sweetness.
Usually, I just enjoy the granola with plant milk and some berries or sliced banana. But I thought it would be fun to sprinkle it onto chocolate bark as a crispy and wholesome surprise, and I’m really glad that I did.
On its own, the granola adds crunch and nutty flavor to the chocolate bark. You can also get festive and creative with toppings! I made one batch that was equal parts dark chocolate and vegan white chocolate (there are a few brands available online and in health food stores), swirled, along with a batch that included chopped walnuts and cranberries.
Making the bark couldn’t be simpler: just melt chocolate in your microwave (or in a double boiler), spread it on a parchment lined baking sheet, top it with about 3/4 cup of the granola, and let it cool, at room temperature or in the fridge for speed. Once it’s hard, break it into pieces and enjoy it.
Or, you can share this as a gift with grateful friends and coworkers. It’s a lot less work than many other edible gifts, but it’s pretty and crowd-pleasing. And, thanks to the fiber, antioxidant-rich cacao, and protein in the granola, it’s got some nourishing benefits, too.
