School is back in session and I am looking for any meal that will be quick and easy to make.

The beginning of the school year is always a bit hectic, but with the help of Smithfield Marinated Fresh Pork, you can put together a delicious, home-cooked meal in 30 minutes or less.

It may look fancy but it is simple and delicious! One of my go-to’s during the school year.

Our family has fallen in love with this pork cacciatore! It is so simple to make and hearty enough to feed and fill up my boys.

Nights are busy with school, homework and activities. It is busy but I am all about getting dinner on the table.

Cacciatore is an Italian dish that mean “hunter” in Italian. It is a savory rustic meal.

You can make it in one pot and it is similar to a stew made with vegetables and a type of meat.

It is a simple meal but with all the ingredients combined it creates an amazing flavorful meal.

This savory meal is more than satisfying and the perfect comfort food as we head into fall.

What you need to make Pork Cacciatore

This cacciatore is an excellent example of how you can take basic ingredients and turn them into a fabulous meal. There is nothing much more gratifying than that.

  • Package Smithfield Slow Roasted Golden Rotisserie Marinated Fresh Pork Tenderloin
  • Olive oil
  • Garlic cloves
  • Mushrooms
  • Carrots
  • Red bell pepper
  • Chicken broth
  • Can diced tomatoes 
  • Tomato paste
  • Italian seasoning 
  • Fresh chopped basil for garnish

How do you make pork cacciatore?

  • Cut the pork tenderloin into one inch pieces. In a large skillet over medium high heat add 1 tablespoon olive oil. Brown the pork pieces until cooked through, to an internal temperature of 145 degrees Fahrenheit. Set aside on a plate.
  • Add 1 tbsp olive oil, garlic, mushrooms, carrots, bell pepper, and sauté© until tender. Add chicken broth, diced tomatoes, tomato paste, and Italian seasoning and combine.
  • Add pork pieces back into the skillet and simmer until sauce is thickened and heated through.

I like to add simple pasta, potatoes or rice to the pork cacciatore to make it a complete meal.

Can you make ahead?

You will love how simple this meal and yes, it can totally be made ahead! The flavors are sometimes even better the next day after sitting and stewing together.

This pork cacciatore lasts about 3 to 5 days in the refrigerator.

To reheat, place back on the stove top and warm up or use a microwave and warm up slowly.

Can you freeze pork cacciatore?

Yes! Don’t you love how awesome this pork cacciatore can be!

If you are have any leftovers, you can freeze it in an airtight container in the freezer up to 3 months.

When ready to warm up slowly warm up in the microwave or stove top. This will keep the flavors continuing to blend together.

Tips for making pork cacciatore

  • For more added flavor, replace the oil with butter to have a more buttery texture.
  • Smithfield pork is cut into 1 inch cubes prior to cooking for a faster cook time.
  • Adjust the quantities of mushrooms and peppers, based on your preference.
  • Love all the colors of bell peppers?! Feel free to substitute them for the green pepper to have different flavors.

  • 1 package Smithfield Slow Roasted Rotisserie Flavored Pork
  • 2 Tbsp olive oil (divided)
  • 3 garlic cloves
  • 8 ounce mushrooms (sliced)
  • 1/2 cup carrots (sliced)
  • 1 red bell pepper (sliced)
  • 1 cup chicken broth
  • 1 28 ounce can diced tomatoes
  • 2 Tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 1/2 cup fresh chopped basil for garnish
