Hummus Breakfast Tacos

If you’ve been hanging around Budget Bytes for a while, you might already know how awesome eggs and hummus are together. If not, let these Hummus Breakfast Tacos be your introduction. The egg-hummus base to these tacos offers plenty of flavor, fiber, and protein to start off your day, and you can customize the toppings to your liking, or to use up items you might already have on hand. I’ll give you a long list of topping ideas below! 👇

What I Used for my Hummus Breakfast Tacos

I used plain hummus today, but I definitely want to try making these tacos again with my other favorite four flavors of hummus. I think cilantro jalapeño would be especially nice! 

I made a simple batch of scrambled eggs, but you could always do whole fried instead, or even stir other add-ins into your scrambled eggs, like diced green chiles.

Pickled Red Onions made my Hummus Breakfast Tacos pop, but if you don’t have any of those, sliced green onions would make a nice substitute.

Cojita cheese is the usual crumbly white cheese for topping tacos, but I didn’t have any, so I used the feta I had on hand instead. Feta has a similar texture and salty punch as Cojita, so it was an easy swap.

Corn or Flour Tortillas?

I’m usually a corn-tortilla-only person when it comes to tacos, but there’s something about the hummus that made me want the softer flour tortillas this time. That’s why I don’t think there should be rules about food. Eat what you want how you want it and don’t let anyone tell you otherwise. ;)

Other Great Breakfast Taco Topping Ideas

Here are some other awesome taco toppers:

  • Protein: instead of hummus try black beans, refried beans, sautéed ham, bacon, or chorizo.
  • Cheese: cheddar and eggs go together like 🤞 so that would be my next option!
  • Vegetables: jalapeños, green onion, diced tomatoes, sautéed bell pepper, avocado, thinly sliced radish, pico de gallo.
  • Sauces: Lime crema, hot sauce (Cholula would be awesome), salsa, guacamole, enchilada sauce

Hummus Breakfast Tacos

Hummus Breakfast Tacos are a quick and easy, protein and fiber packed breakfast that will keep you fueled all morning. Customize the toppings as desired! 

  • 8 small tortillas ($0.80)
  • 2 Tbsp butter ($0.12)
  • 8 large eggs ($2.00)
  • 1 pinch salt and pepper ($0.05)
  • 1 cup hummus ($1.50)

Optional Toppings

  • 1/4 bunch cilantro (0.20)
  • 1/4 cup pickled red onions ($0.07)
  • 1 oz. cojita or feta cheese ($0.55)
  1. Toast the tortillas either in a dry skillet over medium heat or over an open gas flame until browned on the edges.

  2. Crack the eggs into a bowl and whisk until mostly combined. Add the butter to a large skillet and melt over medium-low heat. 

  3. Once the butter is melted and beginning to foam, pour in the whisked eggs. Gently scramble the eggs, taking care not to over stir, until they are mostly set and still moist. Season with a pinch of salt and pepper.

  4. Remove the skillet from the heat and build the tacos. Spread about 2 Tbsp hummus in the center of each tortilla, then add about one egg-worth of scrambled eggs, followed by your desired toppings (cilantro, pickled red onion, and a small pinch of crumbled cheese). Serve immediately!

Can I just eat tacos every day? Breakfast, lunch and dinner? 😅

Step by Step Photos

First things first, toast your tortillas. Toasting the tortillas gives them more flavor and a better, stronger texture. This is especially important if you are using corn tortillas as it SIGNIFICANTLY increases the toasty corn flavor. I did mine over an open gas flame (low setting, using tongs to turn and flip it every 1-2 seconds). It can also be done in a dry skillet over medium, although this takes a bit more time.

Next move on to the scrambled eggs. You can do individual fried eggs if you prefer, but I thought scrambled would be easier to eat in a taco (no yolk running down your hand!). Crack eight eggs into a large bowl and give them a whisk.

Melt 2 Tbsp butter in a large skillet over medium-low heat. Once the butter is melted and beginning to foam, add the whisked eggs. Gently scramble the eggs, taking care not to over stir, until they are mostly set, but still moist. Season with a pinch of salt and pepper.

And then all you have to do is build your tacos! Spread about 2 Tbsp hummus into each tortilla, then top with about one egg-worth of scrambled eggs.

Add Cilantro, Pickled Red Onion, and a pinch of Crumbled Cheese

Then add whatever toppings you like. For me it was pickled red onion, cilantro, and just a small pinch of feta.
