The combination of chicken thighs, oil, and a hot cast iron skillet means you're in for crispy skin and juicy meat (aka perfection, and the marinade — a mixture of honey, Sriracha, garlic, rice wine vinegar, soy sauce and lime juice — ensures tangy-spicy flavor infused in every bite.

The chicken needs at least 30 minutes to marinate, which means you should get that portion done the minute you walk in the door. While the chicken is marinating you can get some rice cooking or whip up a big salad.
