This is a simple, refreshing, summertime Watermelon Salsa recipe!

Watermelon salsa is a beautiful, fresh, fruity salsa to make instead of your usual tomato salsa. Some people are wary of a fruit salsa, claiming that it’s not to be considered a salsa if it’s not made with tomatoes. Well I’m here to tell you that it actually happens to be super delicious. It’s made with all of the ingredients that you’d use to make a more classic tomato salsa, but you’ll be using chopped watermelon in place of tomatoes. You must try it!

If you happen to have leftover watermelon from a party, use it to make watermelon salsa! You only need three cups of finely diced watermelon for the recipe. Be sure to use seedless watermelon so you don’t have any seeds lurking around in the bowl of salsa.

Ingredients needed:

  • seedless watermelon
  • jalapeño pepper
  • fresh cilantro
  • red onion
  • freshly squeezed lime juice
  • salt

This salsa can be put together in a matter of minutes. It’s a very easy recipe. In a medium bowl, combine the watermelon, jalapeno, cilantro, and onion.

Toss the watermelon mixture with lime juice. Season with salt. That’s it! Serve at room temperature (or chilled).

Watermelon salsa is excellent served with tortilla chips (just like regular salsa would be served). Thinly sliced jicama is also great for dipping into this salsa. Enjoy!

Watermelon Salsa

Use up a few wedges of leftover watermelon for a refreshing summer salsa!

Ingredients

  • 3 cups finely diced seedless watermelon
  • cup chopped fresh cilantro
  • ¼ cup finely minced red onion
  • 1 large jalapeno pepper, seeded and minced
  • ¼ cup freshly squeezed lime juice
  • ¼ teaspoon salt, or to taste

Instructions

  • In a medium bowl, toss watermelon, cilantro, onion and jalapeno with lime juice. Season with salt. Serve at room temperature (or chilled).

Notes

  • Use a combination of yellow and pink watermelon to make this a really colorful salsa!
  • Be sure to take out the seeds and the inside membrane from the pepper- that's the extra-hot stuff.
  • It's okay to make this early in the day and let it chill until serving. I've found that it's also good the following day. Drain if juices accumulate.
  • Serve with tortilla chips or slices of jicama.
