These Garlic and Oregano Pork Ribs begin with a simple oil and spice rub. They are delicious!
If you live in a part of the U.S.A. that does ribs right (Tennessee, Texas, Kansas and more), then you know what you’re looking for in a great rack of ribs. The meat should be so tender that it should fall off the bone when you eat it. And it should be spiced perfectly, which is simple because you don’t want or need to over-do it. These Garlic and Oregano Pork Ribs are all of that. And they’re very easy to make at home.
What are the best kind of ribs to use for baking?
Use pork baby back ribs or spare ribs. Look for meaty ribs that aren’t overwhelmed with areas of fat. There will be fat on the ribs, but look for ribs with fat that is evenly spaced and marbled throughout.
Try to use ribs that are fresh and not previously frozen. They will taste better! Your ribs will come in a “rack” (all stuck together).

- fresh oregano
- kosher salt
- cayenne pepper
How to make ribs in the oven:

It’s easy to make ribs in the oven. Place your slab of ribs on a baking sheet or roasting pan that has been sprayed with nonstick spray. To make cleanup even easier, line the pan with foil and then spray.
Combine the remaining ingredients (olive oil, garlic, oregano, kosher salt and cayenne pepper). Rub both sides of the ribs with the mixture, coating evenly.
Roast the ribs in the oven for 30 minutes. Then flip and roast on the other side for another 30 minutes. Remove the ribs from the oven, and let them rest for 10 minutes before slicing.
Move the whole slab of your beautiful, roasted ribs to a cutting board.
Slice in the natural places to slice- between the rib bones.
These Garlic and Oregano Pork Ribs turn out pull-apart tender and oh-so delicious! The meat should fall right off the bone. And this recipe works well for doubling or tripling to feed more people. Ingredients
- 3 pounds pork ribs
- ¼ cup extra virgin olive oil
- 5 medium garlic cloves, finely chopped
- 3 tablespoons fresh chopped oregano
- 2 teaspoons kosher salt
- 1 teaspoon cayenne pepper

Pre-heat the oven to 400 degrees F.

Place the ribs in a roasting pan or on a greased baking sheet in one layer.

In a bowl, combine the remaining ingredients and mix well. Rub both sides of the ribs with the mixture, coating evenly.

Roast in the oven for 1 hour, flipping once after 30 minutes. Remove and let rest, covered, for 10 minutes.
