Quiche can be your main dish for breakfast or lunch. That makes quiche pretty cool. A slice of quiche is pretty hearty on its own, or serve it with a little fruit salad or green salad. If you’re brunching it, serve with orange juice or champagne. If you’re out to lunch, treat yourself to a glass of Rosé!

Ingredients needed:

  • pre-bake pie crust
  • unsalted butter
  • sweet onions
  • salt/pepper
  • Gruyere cheese (Swiss cheese)
  • eggs
  • egg yolks
  • half and half cream
  • nutmeg

Is there a difference between Gruyére cheese and Swiss cheese?

Gruyére is a type of Swiss cheese that works better for melting. You can certainly use traditional Swiss cheese in this Swiss Onion Quiche recipe, but the Gruyére variety might work better for melting into the egg custard while baking.

How to make Swiss Onion Quiche:

The full, printable recipe is at the end of this post. Pre-bake your pie crust. You can use a homemade pie crust (Pioneer Woman’s Perfect Pie Crust is my favorite), or you can use a Pillsbury crust or another brand and pre-bake.

Melt butter in a skillet. Add the onions to the skillet and place the lid on top. Let the onions cook and steam until the onions are softened. Season with salt and pepper. Discard  any accumulated liquid.

Place the sautéed onions in the baked pie crust. Season with salt and pepper. Sprinkle cheese on top.

Combine eggs and egg yolks with half and half and a little bit of nutmeg. Pour the egg mixture on top of the onions and cheese.

Bake for about 30 minutes, or until set. Let the quiche rest for at least 5 minutes before serving.

Sprinkle some chopped fresh parsley on top, if you want to make it pretty. One quiche serves 6 people nicely. This Swiss Onion Quiche has a delicious egg custard with plenty of onions cooked inside. If you’re not into onions, then you might not be into this quiche. But it is quite delicious for the onion lovers out there. The Gruyere cheese gives it a French onion vibe. Enjoy!
