The southwestern theme in these roll ups is a nice combination of flavors. They’re vegetarian- no meat in them at all. It’s just a nice creamy mixture of cheeses and spice wrapped in a tortilla. It’s hard to eat only one, but since this recipe makes 60 appetizers then you can eat several and not feel bad about it! And if you’re lucky enough to have leftovers, you might just find yourself eating them for lunch the following day.

How to make Texas Tortilla Roll Ups:

These sliced tortilla roll appetizers are very easy to make. The filling for the tortillas is all placed into a food processor and processed until smooth. The filling consists of cream cheese, sour cream, cheddar cheese, green chiles, green onions and olives. If you don’t have a food processor, it’s okay to use a hand mixer to combine the filling ingredients. The filling might be a little more chunky since it won’t be broken down by the food processor.

Next, you’ll spread the filling onto flour tortillas.

Each flour tortilla is rolled up tightly, wrapped with damp paper towels and placed into a large zip baggie. Refrigerating the tortilla rolls for a couple of hours will allow the filling to become firm inside the tortilla. Then they’ll be easy to cut. This means these Texas Tortilla Roll Ups are a good make-ahead recipe!

When ready to serve, slice the roll-ups and place them on a platter. You can secure each roll up with a toothpick, if you’d like… or you can just leave them in little rolls as shown in the photos.

Texas Tortilla Roll Ups

Easy appetizer for game day and cocktail parties too!

  • 8 ounces cream cheese, (at room temperature)
  • 8 ounces sour cream
  • One 4-ounce can chopped green chiles, (drained)
  • 1/2 cup shredded cheddar cheese
  • 5 whole green onions (green and white parts), (chopped)
  • 2 tablespoons chopped black olives
  • 12 large flour tortillas ((burrito sized))
  • 8 ounces salsa, (for serving)
  1. In a food processor, combine the cream cheese, sour cream, green onions, chilies, cheddar cheese and olives; process until smooth. Alternately, you can use a hand mixer to combine (it will be just a little chunkier). Spread the mixture on tortillas. Roll up each tortilla tightly.

  2. Wrap the tortillas individually in damp paper towels. Place in an airtight plastic bag; refrigerate until ready to serve (at least 2 hours).

  3. When ready to serve, remove tortilla rolls from the plastic bags and paper toweling. Slice each rolled tortilla crosswise into 1-inch pieces (pinwheels). Place a toothpick in each pinwheel, and serve with a bowl of picante sauce or salsa on the side for dipping.

  • NOTE: You may not need to use all 12 tortillas.
