Chicken Tortilla Sausage Soup

Chicken Tortilla Sausage Soup is a delicious soup recipe with a ton of flavor!

This lovely soup is good game day grub, and it’s a good, warm bowl of comfort for winter too. Loaded with things like beans, potato, chicken and sausage, it’s a nice, filling choice for lunch or dinner. Leftovers are excellent too.

How to make Chicken Tortilla Sausage Soup:

Chicken, sausage and garlic are sautéed, and then bell peppers, onions and potato are added in too. The sautéed mixture is combined with kidney beans, tomatoes, corn, pepperoncini juice and a little bit of hot sauce. Finally, chicken broth is added in, and the soup is simmered until the potatoes are tender. Garnishes are added on top.

What kind of sausage should you use?

The recipe calls for using either chorizo sausage or turkey kielbasa. You should be able to find chorizo in your local market (ask if you cannot find it). Chorizo usually has some spice added to it, making this more of a spicy Mexican soup. Turkey kielbasa will be a lighter choice for adding to this soup.

The Garnishes:

Chopped green onions and chopped fresh cilantro will be a nice garnish for the top of this soup. Shredded cheese melted on top is delicious. And maybe finish it off with sour cream and crushed tortilla chips. If you can locate blue corn tortilla chips, that makes the soup more visually interesting and colorful!

How to make this soup Weight Watchers friendly:

This soup can be WW friendly if you make a couple of adjustments. Be sure to use turkey kielbasa (it will be lighter in fat and calories than the chorizo). Skip the tortilla chips and cheese (or count those as extra points). Point totals using these adjustments are included at the top of this post. The recipe makes six servings, so divide it up evenly to get your serving size (it should be pretty generous). If you want to decrease points even further, eliminate the potato (but you’ll have to re-calculate points if you skip the potato).

Chicken Tortilla Sausage Soup

Such a delicious and flavorful soup recipe!

  • 1 tablespoon extra virgin olive oil
  • 1 pound boneless skinless chicken breast, (cut into bite-sized pieces)
  • salt and pepper, (to taste)
  • 12 ounces chorizo sausage or turkey kielbasa, (diced)
  • 3 medium garlic cloves, (smashed)
  • 1 medium red bell pepper, (seeded and chopped)
  • 1 medium onion, (peeled and chopped)
  • 2 small red potatoes, (diced)
  • One 15-ounce can kidney beans, (rinsed and drained)
  • One 15-ounce can fire-roasted diced tomatoes
  • One 15-ounce can corn, (drained)
  • 1/4 cup pepperoncini juice ((from a jar of pepperoncini))
  • 2 teaspoons hot sauce
  • 4 cups chicken broth
  • 24 (4 ounces) tortilla chips
  • 1½ cups shredded Jack or Cheddar cheese
  • chopped green onions and fresh cilantro, (for garnish (optional))
  1. Preheat a medium soup pot over medium high heat. Add the olive oil and chicken to the pot, and sprinkle with salt and pepper. Lightly brown the chicken about 2 minutes. Add the chorizo or kielbasa and garlic. Cook another 2 to 3 minutes. Add the bell pepper, onion and potato and sauté for an additional 5 minutes. Stir in the kidney beans, tomatoes, corn, pepperoncini juice and hot sauce. Add the chicken broth and bring to a boil.

  2. Reduce the heat to simmer; cover and simmer until the potatoes are tender (10 to 12 minutes).

  3. Preheat the oven broiler. Ladle the soup into 6 shallow bowls and top each bowl with crushed tortilla chips and a sprinkle of cheese. Place the bowls under the hot broiler until the cheese is hot and bubbly. Garnish with green onions and cilantro, if desired.

  • If counting WW points, use turkey kielbasa. Skip the tortilla chips and cheese (or count those as extra points).
  • *In order to make this soup gluten free, you need to be sure to use brands of the following products that do not contain any gluten: chorizo/kielbasa, kidney beans, hot sauce, chicken broth, and tortilla chips.
