I’m such a big fan of salmon, so you’ll be able to find quite a few salmon recipes of all kinds here on the RecipeGirl website. My favorite all time salmon recipe is my Barbecued Salmon, but I also adore a good salmon salad. This Salmon with Mustard and Brown Sugar glaze is another great salmon recipe to try. It has a simple marinade and a thick, delicious glaze.

Substitutions?

I’m not sure I’d make any substitutions for this salmon with mustard and brown sugar glaze. You need the wine for the marinade. Old Bay seasoning can be found in your market’s spice aisle, but you can try making some yourself, if you’d like. Dijon mustard can be substituted for the spicy brown mustard, if needed.

How to make Salmon with Mustard and Brown Sugar Glaze:

The first thing to do is make a little marinade for the salmon. The marinade is made of white wine, butter and Old Bay seasoning. It’s warmed in a saucepan and brought to a boil for about 3 minutes. The marinade is poured over the salmon, and the salmon is baked for 12 to 14 minutes until just about baked through. The amount of time the salmon is baked will vary based on how thick the fillet of salmon is.

Take the baked salmon out of the oven, and spoon the glaze on top. The glaze is a simple mix of spicy brown mustard and brown sugar.

The salmon with mustard and brown sugar glaze is then broiled until the topping is brown and bubbling- about 3 minutes. Sprinkle with a little chopped fresh parsley, if desired. That just makes it pretty.

I like to serve salmon with my all-time favorite Avocado- Pine Nut Salad. That makes it a complete dinner for me, but it’s always nice to add a few roasted potatoes too. Enjoy!

What’s the best kind of salmon to buy for dinner?

I think it’s fun to try different kinds of salmon. I usually source my salmon at Costco, where it’s priced pretty well. Try Atlantic for the traditional salmon that you’re probably used to getting from restaurants. Or try coho or sockeye salmon for a bit different texture and flavor.

Ingredients

  • ¾ cup dry white wine
  • 3 tablespoons salted butter, diced
  • teaspoons Old Bay seasoning
  • salt and pepper, as needed
  • One 2-pound salmon fillet
  • cup spicy brown mustard
  • 3 tablespoons brown sugar

Instructions

  • Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper.
  • In a small saucepan, add the wine, butter and Old Bay seasoning and bring to a boil for 3 minutes. Sprinkle the salmon on both sides with salt and pepper. Place on a rimmed baking sheet; pour the wine mixture over. Bake until salmon is just opaque in center, 12 to 14 minutes (depending on the thickness of the salmon). Remove from oven.
  • Preheat the oven broiler. In a small bowl, combine the mustard and sugar; spread over thee salmon to cover. Broil the salmon until the topping is brown and bubbling, about 3 minutes. Transfer the salmon to platter and serve.

Notes

  • If you are preparing this recipe as gluten-free, just be sure to use a brand of mustard that is known to be GF.
